Herb & Lolly Couscous

pomegranate-seedI recently ended up with a glut of pomegranate. Don’t ask why… it’s a baby brain fail problem and I can’t even.

So this.

I’ve convinced my toddler that pomegranate are lollies. Sucker!!!

Serves 4 as a side or 2-3 as a main with a piece of chicken.

 

Ingredients

  • 200g couscous
  • 150g chicken stock
  • 2 tomatoes
  • 1-2 spring onion stalks
  • 1 handful of parsley leaves
  • 1 handful of coriander leaves
  • 1 clove of garlic
  • 1 pomegranate
  • 1 pinch of cinnamon
  • salt & pepper
  • 50g butter
  • 1 tsp canola oil

Gear

  • thermomix
  • wide bowl
  • wooden spoon

Method

  1. Cut the pomegranate in half
  2. Hold it over the wide bowl and bash the skin with the wooden spoon to make the seeds fall out
  3. Set aside
  4. Into the mixing bowl drop the spring onion, tomatoes, parsley, coriander and garlic. Chop 10 secs / speed 4-5
  5. Set aside
  6. Add the stock, oil, cinnamon, S&P  into the mixing bowl and heat  4 mins / 100˚ / speed 2
  7. Switch off the Thermomix
  8. Drop in the couscous and cover. Sit for 3 minutes.
  9. Add the butter, herb mixture and pomegranate seeds and warm through 15 secs / 70˚ / speed 3 / reverse
  10. Use a fork to separate all the grains
