No Milk Lime & Coconut Pound Cake


What to do when you’re jonesing for some cake but on trawling the fridge you discover a dearth of milk?

Go to the shop could be one answer but you’ve worked up just enough energy to bake so let’s not get carried away with the energy expenditure… turns out, you can make a lovely pound cake sans milk!

Now, I like my desserts really limey so I have been known to add an extra lime to this recipe… I don’t want to make your lips pucker like a Spring break duckface selfie so if you are a normal human follow the recipe, but if you’re like me and like to live on the edge you know what to do…


Lime Cake
1 cup butter
500g icing sugar
4 eggs
3 cups flour
1/2 tsp salt
1 tsp baking powder
1 cup warm water
1 tsp vanilla
2 limes, zest and juice (or 3, if you dare!)

Coconut Buttercream Icing
125g butter, softened
1 1/2 cups icing sugar mixture
1/4 cup Dessicated Coconut
1 tbsp of coconut milk
1/2 tsp vanilla paste (or 1 tsp vanilla essence)


  1. Cream butter and sugar for the cake in a mixer
  2. Add eggs, one at a time
  3. Sift dry ingredients
  4. Add zest and lime juice to water
  5. Alternate water and dry ingredients to creamed mixture
  6. Pour into greased and floured 10 inch tube pan
  7. Bake at 375 degrees for 60 to 65 minutes
  8. Allow the cake to cool before icing
  9. Cream the butter, coconut milk, vanilla and icing mixture for the buttercream in a mixer
  10. Add coconut to taste and mix gently with a spoon
  11. Ice the cake with your buttercream – gorge immmediately!
