Poulette en Cocotte

This recipe comes courtesy of my mate Dan, aka Little Gonzales, who is both a fabulous artist/designer/illustrator/master of the universe, and a lover of egggsellent foodstuffs! This dish was his recommendation for a heartwarming comfort food dinner.


  • 40g butter
  • 125g streaky bacon, diced
  • 60g onion,  chopped
  • 1kg chicken (or quails)
  • 100ml white wine
  • 125g mushrooms, chopped
  • salt & pepper

Preheat the oven to 200 degrees celcius.
Heat the butter in a heavy based pan, add the bacon and onions and saute tills lightly coloured.
Remove and set aside.
Add the chicken and brown on all sides.
Return the bacon and onion to the pan.
Add the wine and season.
Cover with a tight-fitting lid and place in the oven.
Cook for 40 minutes
Add the mushrooms.
Return to the oven for a further 20 minutes.
