Crunchy Muesli Cookie

1/2 cup butter
1/2 cup sunflower oil
1 cup light brown sugar
1/2 tsp vanilla extract
2 eggs
1 tsp instant coffee in 1/4 cup water
1 1/2 cups of spelt flour (or whatever flour you like)
1 tsp baking powder
3 cups porridge oats
1/2 cup each raisins, chocolate chips, sunflower seeds, sesame seeds, chopped nuts, or whatever you prefer

Heat oven to 180oC and oil a cookie sheet.
Cream the oil, butter and sugar together, then add in the eggs, coffee and vanilla (it should emulsify, but don’t worry if it curdles).
Stir in the rest of the ingredients – mixture will be quite stiff.
Drop in tablespoons onto a baking sheet (about 12 per sheet) and flatten slightly with a fork .
Bake in the oven for about 10-15 mins or until golden brown.
