Mum’s Old School Meatloaf

Jannah’s favourite meal ever.

500g sausage mince
500g beef mince
1 cup fresh breadcrumbs
2 onions, finely chopped
1 dessertspoon curry powder
1 tablespoon chopped parsley
1 egg
1/2 cup milk
1/2 cup water
salt & pepper

1/4 cup water
1/2 cup tomato sauce
1/4 cup worcestershire sauce
2 tabplespoons vinegar
1/4 cup brown sugar
1 teaspoon instant coffee
30g butter
2 tablespoons lemon juice

Combined minces, breadcrumbs, onion, salt, pepper, curry powder, parsley and egg in a bowl.
Beat until mixture is well combined.
Combine milk and water and gradually add to mince mixture.
Beat until mixture is very smooth.
Grease a baking dish.
Shape mixture into a loaf on the baking dish.
Bake in moderate oven for 30 minutes.
Meanwhile, combine all sauce ingredients in a saucepan.
Bring to boil and simmer for 5 minutes.
Remove from oven and pour off any surplus fat.
Pour sauce over the meatloaf, return to oven and bake for another 45 minutes, basting frequently.

Serves 4.
