Menu for Cath & Uriah

This menu was to feed our friends for a week or so when they were going through a tough time and cooking was the last thing on their minds.  Each dish was chosen because it improves with age and reheats well.

Spicy Lentil & Tomato Soup

  • Spicy, punchy and flavoursome
  • Have with a dob of lemony yoghurt

Carrot, pumpkin & ginger soup

  • Sweet, soft and unctuous
  • To reheat, you may need to loosen with a little water/milk/stock/cream – whichever takes your fancy

Moroccan Lamb Shanks & cous cous

  • Slow cooked, warm flavours
  • Serve with cous cous

Occo Bucco

  • Slow cooked, family favourite, big flavour
  • I often serve this with polenta, which unfortunately can’t be pre-cooked so crusty bread will have to do ya
  • Serve with gremolata sprinkled on top

Chicken Basquiase

  • Warm, gentle, earthy flavours
  • Again, crusty sourdough is a friend of the basquiase
