Just fab… love love love it… pilfered from the Bank Hotel in Newtown… I hated duck till I tried this salad, now I’m a total convert! (note: the picture below is just a random googled photo – the real thing looks even better!)
1/2 bbq duck (ask them to cut it into pieces for you)
1 bunch coriander
1 bunch thai basil
1 bunch mint
1 inch knob ginger
1 red onion
1-2 small red hot chillis
4 tbsp fish sauce
2 tsp palm sugar (or light brown sugar)
6 tbsp lime juice
To make the dressing, mix the sugar, fish sauce and lime juice.
Roughly tear the herbs into a bowl.
Finely julienne the cucumber, carrot, onion and ginger.
Add to the bowl.
Chop the chilli and add.
Dress the salad.
Strew the pieces of duck over the top of the salad and serve.
Serves 2 as a main meal with leftovers.
