Smoked Oyster Mousse

Ingredients

  • 170ml hot water
  • 5ml chicken stock powder
  • 20 ml gelatine
  • 2 tins oysters, drained
  • 4 spring onions, chopped
  • 250ml sour cream
  • 85ml mayonnaise

Method

  • Dissolve stock in the hot water
  • Soak the gelatine in the liquid
  • Blend the liquid for 30 seconds
  • Add remaining ingredients and blend till completely liquidised
  • Chill
