Morning Glory Muffins

Recipe comes from my old flatmate Jo, who was the pastry chef at the Park Hyatt.


  • 500ml flour
  • 375ml grated apple
  • 200ml dessicated coconut
  • 125 chopped pecans
  • 125ml chopped dates
  • 250ml vegetable oil
  • 3 eggs, beaten
  • 75ml grated carrot
  • 10ml bicarb soda
  • 30ml sugar
  • vanilla extract
  • ground cinnamon
  • salt


  • Preheat oven to 180c
  • Sift dry ingredients into a bowl
  • Combine carrot, apple, coconut, dates and nuts into a bowl
  • Add oil, eggs and vanilla to apple mix and mix well
  • Stir wet ingredients into the dry ingredients until it’s just moistened
  • Bake for 20 minutes

Serves 18-20
