Malva Pudding

This is a traditional south african dessert – the recipe was given to me by Liesel,  a South African chef I lived with in London.



  • 1 cup sugar
  • 1 tbsp butter
  • 1 tbsp apricot jam
  • 1 egg
  • 1 tsp bicarb soda
  • 1 tsp vinegar
  • 1 cup milk
  • 1 cup flour


  • 1 cup milk
  • 3/4 cup sugar
  • 2 tbsp butter
  • 1 tsp vanilla extract
  • 1 cup water



  • Cream the sugar and butter
  • Add the jam and beat well
  • Add the egg
  • In a glass, pour the vinegar over the bicarb soda and add the milk
  • Add the flour and milk mixture to the butter mix
  • Bake at 180c for 45mins


  • Add butter to saucepan and melt
  • Add remaining ingredients
  • Cook till sugar dissolves

Pour the sauce over the pudding as it comes out of the oven.
It will soak into the pudding.
Eat cool.
