Lychee & Mint Salad

Ingredients 
2     cups lychees, chopped
 1/2 cup bulghur wheat
2      tomatoes, finely diced
1     tablespoons lime juice
1     cup mint, chopped
1     head radicchio
1      lime zest, garnish
 1/2  spanish onion, thinly sliced
1     pinch salt & pepper
 
Method 
1     Soak the bulgur in water for 30 mins till soft
2     Squeeze out excess water
3     Add the lychees, lime juice & mint
4     Serve over a bed of raddichio
5     Garnish with onion and lime zest
