Iceberg Lettuce Wedges with Green Olive Dressing

1      iceberg lettuce
1/3 cup olive oil
1/3 cup green olives, sliced
2     tablespoons lemon juice
2     teaspoons thyme, chopped
1/2 teaspoons caster sugar
1     pinch cracked pepper
1     Cut lettuce into 6 wedges
2     Place lettuce on a large flat platter
3     Combine oil, olives, lemon juice, sugar, thyyme and pepper
4     Pour dressing over lettuce immediately prior to serving (not before)
