Matt’s Hummous

The thing that makes Matt’s hummous rock is he toasts and grind the cumin fresh…  it seems like a pain but it takes less than 5 minutes and it is SO good!


* 600g canned chickpeas, drained, rinsed
* 3 garlic cloves, crushed
* 100ml olive oil
* 2 tbs tahini paste*
* 1 tsp cumin seeds, toasted and ground
* Juice of 1 lemon
* pinch of good quality smoky paprika


1. Place the chickpeas, garlic, olive oil, tahini paste, cumin and lemon juice in a food processor and process until combined. Add 1/4 cup (60ml) of water and process again until quite smooth.

2. Place hummus on a small plate or flat bowl and sprinkle paprika lightly over the top then drizzle the edges with good olive oil


makes 3 cups
