Warm Chocolate Risotto

I’m not a huge chocolate lover but this is lovely.  EXTREMELY rich!  A small serve is all you need.  Was nice with poached pears. 

Ingredients

 

 

1 cup Malacchini Carnaroli Rice
2 cups water
4 cups milk, heated
185g Valrhona Gastronomie 61%
1tbsp vanilla extract
2tbsp sugar

Method

Combine the rice and water in a large saucepan and bring to the boil.
Reduce the heat and stir frequently until almost all the liquid has been absorbed.
Gradually add ½cup of the hot milk and stir until the milk is almost absorbed.
Repeat with remaining milk until most of the milk has been absorbed and the rice is tender.
When you are adding the last ½cup of milk, also add the chocolate, vanilla and sugar.
Serve warm with thick cream or vanilla ice-cream.
