I love lime and this cake can really take a lot of it. I bumped it up quite a bit – like maybe 1/2 cup lime juice. Loved it!!!!!!!
1 packet Fluffy Vanilla Cake mix
¼ cup finely dessicated coconut
¼ cup lime juice approx or to taste
Lime juice + zest to taste
Lime zest rubbed into 2 tablespoons castor [fine] sugar for topping
2 packets of Cadbury white cooking chocolate
LIME + COCONUT CAKE
Make cake mix according to instructions, adding coconut to mixture, and using half the liquid and replacing ¼ cup of the liquid with lime juice.
Add more lime juice to taste.
LIME + COCONUT CAKE FILLING
Make lime butter icing flavoured with lime zest to taste
LIME + COCONUT CAKE ICING
Make butter icing flavoured with lime zest of one to two limes to taste.
MAKING IT UP
Cut cake in half and spread centre with lime butter icing.
Put two pieces together and spread butter icing all over smoothly.
Melt white chocolate and drizzle over the cake top + let it drizzle down the sides. Sprinkle top while chocolate is still warm with lime zest which was previously mixed + rubbed into castor sugar.
Ps I can’t recall if I added extra liquid to the recipe to allow for the coconut – but I don’t think I did…..
